Budget-Friendly Recipes

This morning, I opened up my email and found something that I just had to share with you guys!

My daily Cooking Light email today was a collection of recipes and tips on How to Eat Healthy on a Budget.  They also included an entire section of 103 Recipes that can feed 4 for under $10.  WHOA!

Cooking Light, the magazine is my absolute favorite… but their website is even better!  They send me collections like this pretty often, and I sometimes find myself getting lost in recipe world, clicking, and saving and clicking some more.  It’s what most of my recipes are based off of.

I am pretty excited to try some of these “budget-friendly” recipes out… here are my top 5 from this collection:

1.  Sausage Ragu over Creamy Polenta

I’m dying to try to make my own Polenta!

2.  Summer Veggie Pizza

Homemade Pizzas are the best, and I love the addition of corn with this one.

3.  Tomato Soup w/ Roasted Chickpeas

MMM, would love to try a new tomato soup.  Replace the Heavy Cream with Light or FF Half-and-Half and reduce your fat & calories even more!

4.  Chicken & Rice Casserole

Casseroles are always easy and delish.  This one is stuffed with squash & zucchini so I’m already intrigued.

5.  Korean-Style Beef Skewers

If you know anything about me, you know I just LOVE making Asian dishes!  This one is different than anything else I’ve done and I cannot wait to test it out.
