We had a fairly smooth move-in weekend and a really fun day setting everything up with our parents and friend Matt.

We celebrated with a bottle (or 2) of champagne and discovered an amazing pizza place that serves XXXXXXXL PIES (28 inches!! wahhhhhh!)

After a few requests on Facebook, I wanted to share a couple pictures with you!  Enjoy!

Sandy & Salsa Soup

WHEW!!!!!!!!!!!!!!  It’s been a while.

Things have been absolutely crazy for a little while over here.  Hurricane Sandy (that bitch!) tore apart most of the East Coast this week, including Philly and my home away from home- Atlantic City.  Us North-East-Coasters always watch these weather events go down far away down south, in Florida, the Caribbean, New Orleans, etc.  Wow, was it crazy to see it happening in OUR HOME!

Besides my original cheer (and dance around the house) when I found out my work (who NEVER EVER closes) was not going to open on monday, things were pretty scary.  It rained and rained and got windier as the night went on.  I had to take little Stelly outside on a leash- I was afriad she’d blow away!  Somehow, despite a few flickerings, our electricity stayed on- which it never does.  We were very lucky!

No word yet on the shore house.  The people who live upstairs in our house evacuated Ventnor before the storm, and if you’ve EVER watched the news this week, you will know that you can’t exactly get back to the Jersey Shore right now.  I am hoping for the best, and our house is on the 3rd block from the beach… so crossing our fingers on that one.

Here’s a little bit of what you’ve missed while I was MIA/without internet/Sandy-fied:

1.  Dave bought me an AWESOME cookbook including tons of recipes from famous restaurants and Philly Chefs… don’t know what to make first!

2.  Some great pics from Philly pre-Sandy!  On the right is Eastern State Penitentiary, the haunted prison in Philly where we we did the Halloween Tour this past weekend… spooky-scary!

Took some great pics in the city… on the left we have City Hall and the right is the ominous Eastern State Penitentiary

3.  Love these Instagrams!  Had to share.

Check out these Insta-Gems: On the left is Marty, the cutest puppy ever… checking himself out in the mirror and on the right is a great “TBT” of my sister and I!

4.  Dad and I made home-roasted Poblano Peppers for a recipe I’ll share with you soon!  My Dad is a PRO at roasting peppers and he helped me out big time.

Roasted Poblanos were great… definitely going to be doing this more often!

5.  Started my new diet at work for M-F, drinking this awesome healthy protein shake for lunch now.  Spiced Chai?  Cappuccino?  Yes please!  Made Tilapia, those yummy peppers, and enjoyed take-out from my fav. Thai place, Silk Cuisine!

All the good food …

6.  We had more than enough cuddle time with our little Stella May who was afraid of the windy storm!

Stelly-Bear 🙂

7.  Last week while I had to drive Dave to hockey practice for THE LAST TIME (yes- he got his boot off and can DRIVE!), I ran via the Schuylkill River Trail all the way to our new apt… and back to the trail… and to the Art Museum and back to Penn!  5.5 miles, and the farthest I’ve ever ran alone.  🙂  And also wanted to share my newest find on Pandora, remixes from Daft Punk’s TRON soundtrack.  WHOA.  Great running tunes!

Map My Run! And sharing with you one of my favorite Pandora Discoveries… amazing workout stuff.

8.  Dave’s sister Rachel is housing a homeless Poodle named Ellie during the storm!  She works at a Vet and they are very close to finding this sweetie a home.  I couldn’t stop petting her 🙂

Ellie is soooooooo sweet and adorable!!!

Finally, one of the recipes I tried out during this week was this Cooking Light Spicy Tomato & White Bean Soup.  Soup seemed to be the perfect choice for the rainy day!

Spicy Tomato & White Bean Soup

aka Salsa Soup

Recipe slightly adapted from:  Cooking Light

Ingredients:

1 (14-ounce) can Fat Free, Low-Sodium Chicken Broth
2 teaspoons Chili Powder
1 teaspoon Cumin
1 (16-ounce) can Canenelli Beans
1 medium Poblano Chile, halved and seeded
1/2 Onion, cut into 1/2-inch-thick wedges
1 pint Grape Tomatoes
1/4 cup chopped Fresh Cilantro
2 Tablespoons fresh Lime Juice
1 Tablespoon EVOO
1/2 teaspoon Salt
Cilantro sprigs (optional)

Directions:

  1. Combine 1 cup broth, chili powder, cumin, and beans in a medium-sized pot over medium-high heat. Combine remaining broth, poblano, and onion in a food processor; pulse until vegetables are chopped. Add onion mixture to pot.
  2. Add tomatoes and cilantro to food processor, and process until coarsely chopped. Add tomato mixture to pan; bring to a boil. Cover, reduce heat, and simmer 5 minutes or until vegetables are tender. Remove from heat; stir in juice, olive oil, and salt. Garnish with cilantro sprigs.

My thoughts on this soup:  um… hello… this is SALSA!  While I was making this soup, Dave was keeping me company.  We kept on talking about how it smelled just like our favorite fresh salsa.  Dave took a glance at my chopped veggies… looks just like salsa.  I picked up the recipe and took a glance over it at the ingredients… and YES IT IS SALSA.

Although it was a little strange to be eating super chopped up hot salsa, it was really tasty and take a look, it’s really healthy too.  I ate this at work the next day for lunch and it was really filling too.

Looks like salsa, right?

The white beans add texture and make it more filling!

I hope you all have power and fared well during Hurricane Sandy!

HAPPY HALLOWEEN!

Anniversary Things

This weekend, Dave and I celebrated our 4 YEAR anniversary!  I love celebrating our Anniversaries because there can never be too many days spent being happy to have one another 🙂

Starting the weekend off with these surprise beautiful flowers at work just made my day!  Dave is the best!

We spent the weekend downtown, puppy-sitting for this little cutie, Marty.  He kept us busy and we could not get enough of his fuzzy little face!  I love him!

Of course we ate tons of delicious food… drinks… and even got to meet up with my favorites, Allie (of All I Eat Food) and Jay for dinner on Friday night.

Despite a few setbacks (broken leg, flat tire, missing dinner reservations…) we had an absolutely amazing weekend together.  Thanks Dave for the best 4 years I could ask for!

Oh, and here’s our VERY FIRST pic together!  This was taken just after the Phillies won the World Series 🙂

Happy Friday!

Happy Friday everyone!!

A few things to share…

Last week, during my “vacation at home”… we got to sit in the Phillies Diamond Club… ROW 2!  Is every game from now on going to suck in comparison?  Probably.

Oh, and we got free all you can eat food and drinks.  Including a mini-cupcake sampler.  Bam.

Yes, this was at a BALLPARK

I finally cooked up that Goat Chorizo I bought… we did sausage & peppers sandwiches.  OMG.

I also got to make some awesome bloodies using the spicy pickled green beans Dave brought home from Vancouver.

Be on the lookout for this pasta salad recipe using Trader Joe’s Spicy Thai Peanut dressing!  Delish.

nom nom nom

You’ve also missed the last weekend at the shore, where my cousin Dani and Stella got to spend some quality time… apartment shopping in Philly, my trip to Long Island to see Lauren… and of course many adorable pics of Miss Stella May!

… how gorgeous is that mosaic art on one of the streets we looked at?!

Five Recipes I’m Dying to Try:

Chocolate Therapy’s Funfetti Whoopie Pies.  Like… REALLY!?  Could they be any more adorable?

Happy Valley Chow’s Jalapeno Cheddar Cornbread.  I feel like I don’t even need to show you… just those 3 ingredients got my attention!

The Black Peppercorn’s Iced Coffee Popsicles.  Need I say more?  Nope, didn’t think so!

How Sweet It Is’ Cheesy Puff Pull Apart Bread:  I’m hearing Cartman from South Park right now… but WOW just take a look at this… are you drooling yet?

Oh Bite It’s Salted Caramel Straws.  So simple, yet such an amazing idea!!!

Hope everyone has a fantastic weekend!!  ❤

4th of July

I hope everyone had a wonderful 4th of July!  Here in Philly, it was as hot as Will Smith was kicking alien butt in Independence Day (haaaaaaaaaaaa haaaaaaa).

Seriously though, that is the best movie ever.  I was really happy AMC had it on last night.

Although I unfortunately had to work this holiday, I was able to sneak in a much-needed workout:  a spin class with my favorite instructor where I burned over 700 calories.  🙂

ready, set, spin!

patriotic! as fancy as my nails get 🙂

After work, my family and I made a visit with our family friends to the pool I grew up going to.  It was weird being there, without all of our friends, not knowing anyone, and seeing all of the changes.  Dave, Sammy, and I took a few turns off of the diving board and I finally finished the Rob Lowe book.  Everyone- read it.  It’s SO AMAZING.

We showered up, and drove down to Chesapeake City, MD for some hard shell crabs.  It is a family tradition and one of my favorite meals EVER.  The Tap Room is the restaurant we go to, and they are awesome.  The tables are covered with a brown-paper bag-like table cloth, and pouring your ketchup directly onto the table is encouraged.

Some of us order MD Crab Soup, Corn on the Cob, French Fries, and the best Onion Rings out there.  Everything is covered in Old Bay and is super salty and delicious.

Alan fixes up his soup and Sammy shows off one of his 8 crabs he devoured!

yum yum yum! Fries, Steamers, Onion Rings, and MUSSELS!

This batch of crabs were “Jumbos”, one of the biggest sizes out there.  We ordered two dozen seasoned, which of course means they are doused with more Old Bay.  I am telling you, I’ve been eating crabs for years… these were the BEST crabs I’ve ever eaten.  OMG.  They were not only huge but so meaty and sweet and juicy.

The town itself is a little strange… there is never anyone outside, except for on their boats or in the bar.  They do have one beautiful view of the Chesapeake!

PRETTY! Notice my smile is a little off! Still getting used to the invisalign… didn’t even notice I was smiling funny.

What did you make for the 4th?  Link me!

Happy Birthday, to me!

My birthday is a holiday.  It just always seems to turn out that way… and I’m okay with it.  We really have been celebrating my birthday here and there for the past month!

1.  Three Weeks ago, our friend “Patrice” came to visit from Cali!  I took a half day and we went to a Phillies Game.

2.  Coronas on the beach

3.  Birthday celebration in Atlantic City wouldn’t be complete without a White House Special from the best hoagie place in town… White House!

4.  Donny came to the celebration w/ a White Trash Creme Brulee Pie from Dangerously Delicious Pies in Baltimore.  WOW.  We cut it using a credit card.  Classy…

5.  Regan treated everyone to a fabulous dinner at Yama, filled with lots of sushi & sake bombs!

6.  Fast forward to this past Friday, Birthday Eve.  Got out of work at 2pm to have a few drinks with my work girls!  Love the BrewPub sampler!

7.  Jerry Sandusky was found guilty of 45/48 charges brought against him in the Child Sexual Abuse case.  The pups were watching intently with the whole family as we watched the announcement on CNN.  No winners in this story but at least justice is starting to be served!

8.  I received some really awesome birthday gifts!  My favorite being the homemade giant card Dave gave me 🙂  He also bought me my first cast iron skillet & dutch oven… think of all the recipes I can make with them!!!

9.  We spent my actual birthday, June 23rd at Dave’s college roommates wedding, Brian & Danielle.  They had gorgeous weather.  Danielle looked stunning and the wedding was such a great time.

With a few other little things in between… it was a great birthday!  Thanks to everyone who made this birth-month so special.  I love you all!
