“Biggest Loser” Healthy Pancakes

Nobody likes boring.  Right?

That’s how I’ve felt lately with my life weekday breakfasts.  I’ve been eating the same breakfast for about a year.  I’ll make some modifications but it’s basically the same:  Fat Free Greek Yogurt -or- Fat Free Cottage Cheese + Jam -or- Fig Butter + Wheat Germ -or- Ground Flax + Frozen Berries -or Fresh Berries (crazy change-up here, right?) + 1/2 Banana.

Don’t get me wrong.  It’s freakin’ delicious and so filling.  It’s super healthy in so many ways and it’s for sure been a huge part of my successful weight loss.  But I’m over it.  Maybe not for good, but for today.

I decided to try a recipe from The Biggest Loser.  When I lived at home, we used to watch this show every week during dinner time.  Don’t you just feel like a giant shit eating a delicious dinner while the contestants are learning how to diet and going through the most grueling, difficult training in their lives?  It works for me though.

“Biggest Loser” Healthy Pancakes


6 Egg Whites

1 cup Old Fashioned Oats, dry

1 cup Fat Free Cottage Cheese

2 teaspoons Sugar

1 teaspoon Cinnamon

1 teaspoon Vanilla


1.  Put all ingredients into a blender and mix until creamy and smooth.

2.  Heat a large non-stick skillet or griddle to medium-high heat.  Prepare with Cooking Spray and using a 1/4 Cup Measure, pour out four pancakes.  Let cook until the tops start to bubble, then flip.  Cook for another 4 minutes or so until the bottom is also browned.

I first  have to tell you that I never eat pancakes.  My Mom used to make us girls and our best friends Laurie and Julie the most amazing pancakes ever.  She would make them for us every weekend when we had sleepovers.  She used to fry them up in butter which would make the pancakes have what we called “crispy ends”… they… where… SO GOOD!  We used to pull them off the pancakes, save them, and eat them all at once at the end.  Once a fatty foodie, always a foodie!  

Besides no pancakes living up to my Mom’s, I never can resist a poached egg or omelet when I’m out to brunch, so I NEVER end up with the sweeter options.  With all of that being said, I think I have a new found friend in the pancake.

These pancakes are SO super easy to make, and they actually taste good!  Really good!  I was surprised at how perfectly they “fried” up, every single one of them were perfectly browned and crispy without being greasy or burnt.  YUM!

This recipe made 9 pancakes for us- 1 we split while they were hot, and Dave and I each had 4 for breakfast.  Splitting the entire recipe only costs just under 300 calories.  Not too bad, right?

Next week, I’m going to try them with bananas!  🙂
